Caprese Salad arranged as an edible Christmas Wreath
 

This recipe is a traditional caprese salad, with a delectable combination of fresh basil, cherry tomatoes and bocconcini (baby mozzarella). I also use some fresh chives to tie a little edible chive bow at the bottom of the wreath for an added wow factor! :) Finally, you can dress this salad wreath with some extra-virgin olive oil and balsamic glaze.

You can scale this recipe up or down, making a larger and more heavily loaded wreath for a big party or family event, or you can make mini single serve wreaths for each guest.

I do not suggest trying to prepare this salad ahead of time as a meal prep but rather I recommend preparing it just before serving. It only takes a few minutes to put together and all of the ingredients are best served freshly prepared. Since it’s a bit fiddly and might take you a few tries to get it right, you can prepare the little chive bow beforehand and keep it in the fridge until you are ready to place it on your salad wreath as the final garnish!


PRO TIP: When making the chive bow it helps to wet the chives first so that they bend without tearing. Then you can use another chive as the “tie” around the centre of the bow and knot it gently, before cutting off the excess with some kitchen scissors :)



RECIPE

CHRISTMAS WREATH CAPRESE SALAD

Serves: 4 (as a starter or side)

You can easily scale this recipe up or down depending on what you want!

Time: 5 - 10 minutes

INGREDIENTS

  • 1 bunch fresh basil

  • 9 cherry tomatoes, washed

  • 12 bocconcini (baby mozzarella balls)

    Optional:

  • 2 fresh chives

FOR DRESSING:

  • Extra-virgin olive oil

  • Balsamic glaze

METHOD

  1. (OPTIONAL STEP) CHIVE BOW: Wet your chives so they are damp and can bend without breaking or tearing. Then fold one chive into a bow. With the second chive, make a tie around the centre of the bow, to hold it in place, then gently knot and cut off the excess with a pair of kitchen scissors.

  2. Very gently wash your basil leaves and dry in a salad spinner. If you are not delicate with the basil when handling it may bruise or tear.

  3. Arrange the basil on a large platter, in the shape of a wreath. TIP: To add some more dimension to your wreath, turn some of the basil leaves over. Basil is a slightly different shade of green on the other side of the leaf and this will create a lovely two-tone effect that will make your wreath look more full and less flat than it would if all leaves were facing the same way!

  4. Over the fresh basil, arrange your cherry tomatoes and bocconcini. Then add the chive bow on the bottom. I place it over the bocconcini, so the green stands out against the white and doesn’t get camoflaged in the greenery of the fresh basil.

  5. Your Christmas wreath caprese is now ready to take its premier place on the table! Just before eating, drizzle with some extra-virgin olive oil and balsamic glaze for added flavour!
