This is one of those recipes that looks beautiful, tastes spectacular and is incredibly healthy. Not to mention it can be made in just 5 minutes! That’s a win-win-win-win! :)

You can buy blueberry yoghurt or make it by mixing some blueberry jam with greek or vanilla yoghurt!

There are:

  • antioxidants in blueberries

  • healthy fats and vitamin E in almonds

  • fibre and slow release energy in toasted oats

  • phytonutrients in mint

  • PLUS protein, probiotics and calcium in yoghurt!

This is a great go-to when you want a snack but don’t want to grab something unhealthy for a quick fix…but you also happen to be busy and pressed for time. The convenience of this recipe also makes it perfect for busy mornings and especially great as a quick, after-school snack.

It’s an ingenious way to get picky kids eating healthy because the bright colours, fun textures and sweet flavour are sure to please! :)

The yoghurt can be substituted for a lactose-free or vegan equivalent so everyone can enjoy!


HOW TO TOAST OATS:


You can easily toast oats by pouring them evenly into a baking tray and placing them in an oven preheated to 165°C to bake for just around 3 - 5 minutes or until they have turned a bit golden in colour with a nuttier, toasted flavour. If they turn brown they may develop a burnt taste so make sure to keep an eye on them. The less oats you are toasting the quicker they will colour so be aware of that too.

Layered Blueberry Parfait with mint and almonds
 

BLUEBERRY PARFAIT

Serves: 1

Prep Time: 5 minutes if you have toasted oats

10 minutes if you are toasting the oats

Difficulty: Easy / Beginner

 
 

INGREDIENTS

  • 200g of blueberry yoghurt (or 200g greek/vanilla yoghurt mixed with some blueberry jam or coulis)

  • 1/4 cup old-fashioned rolled oats

  • 2 tbsps almonds

  • 1 small handful of blueberries, washed

  • Fresh mint

METHOD

  1. Toast Oats: Preheat oven to 165°C. Pour oats into a baking tray and spread evenly. Place in the oven to bake for around 3 - 5 minutes or until they have turned a bit golden in colour with a nuttier, toasted flavour. If they turn brown they may develop a burnt taste so make sure to keep an eye on them. The less oats you are toasting the quicker they will colour so be aware of that too.

  2. Layer half of the blueberry yoghurt into a serving glass. Top with half of the toasted oats, half of the almonds, half of the blueberries and some mint leaves.

  3. Repeat to create a second layer.

  4. Serve and enjoy :)
