Lebanese Cucumber
It’s not often you can say it - but cucumbers are the star of this dish! They provide freshness and a crispy crunch to this creamy yoghurt salad, acting as a flavour base for the other ingredients to build upon. I use Lebanese cucumber for this recipe as they are crispier and less watery. I peel the cucumber, but you can use it unpeeled if you prefer.
Garlic
Whilst raw garlic may seem like too much, it is a prominent and flavourful component of this dish. TRUST ME when I say the abundance of creamy yoghurt keeps the garlic mellow, so the flavour is there but it doesn’t overwhelm the salad, making instead a harmonious and delicious balance :) In fact, I recommend only roughly chopping the garlic and not mincing it, because if it were minced the pieces would be too small and the flavour would get almost completely lost in the yoghurt.
Greek Yoghurt
Yoghurt is the main component of this recipe, providing the “body” of the dish and the main texture. It is the element which brings all the others together. I use Greek Yoghurt in this recipe, as the savoury tang suits the flavours of this salad. All the ingredients - including the dressing - are mixed through the yoghurt, adding flavour and texture to each bite.
Olive Oil
Is one component of the simple “dressing” for this easy salad, and is incorporated into the yoghurt.
Lemon Juice
The other component of the dressing which is incorporated into the yoghurt. It gives a fresh and zingy flavour that complements the fresh cucumber, garlic and olive oil very well.

INGREDIENTS
1 Lebanese cucumber, peeled
2 cloves of garlic, peeled
1 tbsp olive oil
1 tbsp lemon juice
1/4 tsp salt, or to taste
400g Greek yoghurt
METHOD
Slice the cucumber into rounds.
Roughly chop the garlic.
Add cucumber slices, roughly chopped garlic, olive oil, lemon juice, salt and Greek yoghurt to a bowl. Mix the ingredients together, making sure the garlic and cucumber is evenly distributed and that the olive oil and lemon juice has been thoroughly incorporated with the yoghurt.
Add to serving bowls and enjoy :)
