How To Make Strawberry Puree
Strawberry puree is a great way to add natural colour and real strawberry flavour to many dishes and beverages. You only need a couple minutes and a blender to make this no-cook strawberry puree which can keep in the fridge in an airtight container for 5-7 days. Perfect for easily and quickly flavouring milkshakes, iced strawberry matcha lattes, cheesecake or spooning over ice cream and other desserts!
Strawberry puree is so convenient and versatile! It’s already prepped in the refrigerator so there’s no need to wash and slice strawberries whenever you need to add them to a dish. You simply grab the container and spoon out your ready made puree which saves so much time. And of course, it can go where a strawberry in standard form cannot go. Strawberries once pureed can be used as flavouring for beverages or a topping for desserts and become a useful ingredient in recipes where you want to impart both colour and flavour such as this cheesecake.

White Sugar
Enhances the sweetness of the strawberry puree while still letting the fresh strawberry flavour shine. If your strawberries are very sweet, you might add a little bit less sugar or if your strawberries are a bit on the tart side, add a touch more sugar :)
Lemon Juice
This helps preserve the pureed strawberries and balances the flavours of strawberry puree by levelling out the sweetness.
HOW LONG DOES IT TAKE TO MAKE STRAWBERRY PUREE
It will vary depending on the size of the batch of puree you are making. Basically you’ll just need to blend all the ingredients together until the strawberries have been well…pureed! And there are no chunks :)
Following the quantities used in this recipe to create around 2 cups worth of strawberry puree, in my blender it takes between only 30 seconds to 1 minute!

STRAWBERRY PUREE
Yield: 2 cups
Prep Time: 1 - 2 minutes
Difficulty: Easy / Beginner
INGREDIENTS
450g fresh strawberries, washed and tops sliced off
1 - 2 tbsps white sugar, according to your tastes
2 tsps lemon juice
METHOD
Add all ingredients to a blender and blend on high for 30 seconds - 1 minute or until pureed and smooth with no chunks.
Taste and if need be, add a little more sugar or a little more lemon juice according to your tastes.
STORAGE: Store strawberry puree in an airtight container in the fridge for 5-7 days.
